Whole Wheat Pancakes and Homemade Strawberry Syrup
So, it being summer in SW Florida, it is HOT. Sitting down to a hot meal is just too hard, so we all like to eat lighter and healthier in the summer. But one of the main reasons I live here is the weather, so I guess I really can't complain when it is 500* day after day. So between that and getting the kids ready for back to school, it has been busy to say the least. I think that this year the kids were ready to go back, they miss their friends and all the social craziness of the tween years. Oh the stories I hear...
So I have this great recipe for homemade whole wheat pancakes and strawberry syrup and a little surprise recipe at the end, all of which are perfect for these hot summer days!
Whole Wheat Pancakes
- 3/4 cup whole wheat flour
- 3/4 cup all purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 2 large eggs
- 1 cup low-fat buttermilk
- 3/4 cup nonfat milk
- 1 tbsp honey
- 1/4 tsp vanilla extract
- In a large bowl, whisk together the dry ingredients
- In a medium bowl beat eggs, buttermilk, milk, honey, and vanilla
- Coat nonstick griddle or skillet with cooking spray and pre-heat over medium heat
- Stir the wet ingredients into the dry mix, leaving batter a bit lumpy, don't mix all the way
- Ladle batter onto griddle using 1/4 cup for each pancake

Flip pancakes when bubbles on top stay uncovered
Strawberry Sauce
- 2 pints (16 oz) fresh strawberries, or 4 cups of frozen, unthawed
- 1 tsp lemon juice
- 2 tbsp pure Maple syrup
- Place berries in food processor, process until they are a chunky puree
- Pour into small saucepan and heat over low heat.
- Stir in lemon juice and maple syrup
- Heat until warm
- Serve over hot pancakes, ENJOY!

Mango- Lemon Mania
- 1 envelope of Kool-Aid Lemonade unsweetened drink mix
- 1 envelope Kool-Aid Tangerine unsweetened drink mix
- 2 1/2 cups sugar
- 8 cups (2 Quarts) cold water
- 1 1/4 cup of fresh Mange nectar
- Mix all in large pitcher, stir until dissolved
- Serve over ice cubes
- Or soft freeze for a refreshing slushy drink
