The day before Thanksgiving!! And I'm at work...

Ah well.. I read a friend's blog last night which was sad, and happy at the same time. She made me realize that our job as parents is the most difficult, but also the most rewarding thing we will ever do. Reading it reminded me that although this time of year is soo busy and the kids get antsy and anxious and impatient and all together wild, this is the time to enjoy all the craziness, I sat back last night and made a list of things that I am thankful for this year.. My kids and all their crazy antics top the list as well as the rest of my family... I've got a good job and great friends, I've got a roof over my head and a car to drive... I guess I'm doing ok.

Sweet Potato Oranges

  • 6 oranges
  • 3 cups cooked, mashed sweet potato
  • 1 cup white sugar
  • 1/4 cup orange juice
  • 2 eggs, lightly beaten
  • 1 tsp vanilla extract
  • 1 cup butter, softened
  • 1 tsp grated orange peel
  • 1 cup brown sugar
  • 1/2 tsp all-purpose flour
  1. Preheat oven to 350*
  2. Prepare oranges by cutting the tops off, about 1/2 inch down. Spoon out the flesh, leaving the shell
  3. In a large bowl, combine sweet potatoes, sugar, oj, eggs, vanilla,1/2 cup butter and orange peel.
  4. Spoon into orange shells. Place in deep casserole dish.
  5. In sauce pan, over med heat, combine 1/2 cup butter, brown sugar, and flour.  Cook until dissolved.
  6. Spoon over oranges
  7. Fill casserole dish with water to fill 1/2 inch
  8. Bake for 30 mins

A couple of topper options include marshmallows (like the picture), or walnuts, or pecans, or an extra dollop of brown sugar
