Summer's over???

Well this is the last week of summer.... in most places this is a big deal. BUT down here in SW Fla, it is still HOT, and the weather is not breaking anytime soon... I wish it would. I spent alot of the past few weeks working on my various websites and setting up social pages. I am now running 2 webstores, 2 twitter accounts, 2 Facebook Fan pages, and this blog, among other things. I will post links later in this blog.
So, since I am sticking with the theme of 2s, I have 2 awesome and easy recipes.
With the weather starting to cool, I love to use my slow-cooker- and its so easy!!
Hash Brown Skillet
- 1 lb of ground turkey sausage
- 1 med onion
- 6 cups frozen Hash Brown Potatoes
- 1 3/4 shredded cheddar cheese
- 1 small red sweet pepper- chopped
- 12 med eggs
- 12 oz can evaporated low-fat milk
- 1/2 tsp pepper
- 1/2 tsp salt
- Optional addition- 1 can Mild Salsa
- In large skillet, cook sausage and onion until browned, drain off fat
- Coat the inside of a 6 quart slow cooker with cooking spray.
- Combine sausage mixture, frozen potatoes, cheese and pepper.
- In med bowl, whisk eggs, evaporated milk, salt and pepper
- Add to sauage mix in slow cooker and mix gently
- Cover, cook on low-heat for 6-8 hours
- Uncover for 15 minutes before serving to leat excess water evaporate
- Top with salsa if desired.
Another fave slow cooker dish-
Cranberry- Maple Oatmeal
- 4 3/4 cups water
- 1 1/2 cups whole oak grains- chopped
- 3/4 cup maple syrup
- 1/2 cup raisins
- 1/2 cup dried cranberries
- 1 tsp ground cinnamon
- 1 tsp vanilla
- 1/2 tsp salt
- Coat inside slow cooker with cooking spray
- Combine all ingredients, cover, cook on low-heat for 6-7 hours
